Happy Almost-Super-Bowl!

Things I look forward to about the Super Bowl:

Then, sometimes I enjoy these:

This year Ryan has been taken over by writing his paper that he's trying to submit to a conference, so most likely I'll be having a Super Bowl Party of One, which is fine by me.  I've already made last year's Sweet Chex Mix, and plan to have a homemade vegetable platter, sausage dip and crackers, and maybe a soda. I plan on having leftovers, but leftovers rule, so I'm okay with that, too. 

I got the recipe from Jane Maynard (of This Week For Dinner, here's the original) last year and had enough good memories that it was a necessity for this year.  It's super simple, and I haven't done much experimentation with it yet. Though, Ryan suggested we might toast the coconut and almonds for the next batch.  

Sweet Chex Mix    (adapted slightly from thisweekfordinner.com) (printer-friendly version)

Ingredients
1 small box Rice Chex
2 C coconut (optional: toasted)
1 C sliced almonds (optional: toasted)
1 C karo syrup
1 C sugar
1 1/2 C butter
Dash salt
1/2 t. baking soda
1 t. vanilla

Directions
Add sugar, karo syrup, salt and butter in a microwavable bowl and microwave for 5 minutes. Stir and cook 2 more minutes (watch out – it’s HOT). Using hot pads, remove from microwave and add vanilla and baking soda. Stir until combined.

Meanwhile, if choosing to toast coconut and almonds, do so. Add Rice Chex, coconut, and sliced almonds into a large mixing bowl and mix together.

Pour sugar mixture over the dry ingredients and stir gently to combine.
