Birthday Sweets: Orange Creme Cheese Frosting



This year Ryan made me a super delicious birthday dessert.  A yellow cake with an orange creme cheese frosting.  We also had homemade strawberry ice cream, but that will get its own post later.  You guys, this cake was delicious, but I am obsessed with the frosting.  It's perfect for a late spring/early summer sweet. Mmm. My mouth is watering just thinking about it - now I know what I'll have for a late lunch. ;)  If you can think of any reason to make a light cake in the summer or a spice cake in the fall with this frosting.... Just trust me, this frosting is a good idea.

5 tablespoons unsalted butter, cut into 5 pieces and softened
1 ¼ cups (5 ounces) confectioner’s sugar
8 ounces cream cheese, cut into 4 pieces, softened
½ teaspoon vanilla extract
1 ½ teaspoons finely grated zest from 1 orange

In a standing mixer fitted with the paddle attachment, beat the butter, and sugar at medium-high speed until light and fluffy, 1 to 2 minutes.  Add the cream cheese one piece at a time, beating thoroughly after each addition.  Add the vanilla and orange zest and beat until no lumps remain, about 30 seconds.
