Favorite Summer Meal:
Need: a grill and shade

  • Boneless Skinless Chicken Breats or Sliced Pork Tenderloin
  • McCormick Grill Mates Packet Marinade - one packet for 2lbs. or less
(These are the BEST. So much better than bottle marinades. All you need is water, vinegar, oil and a ziploc!)
Here are my favorites:
So, start marinating the night before or at least 4-5 hours before for amazing flavor.
  • Summer Squash
So Easy! Clean them, slice them, throw them in a bowl, drizzle with olive oil, salt and pepper and mix around. Then, we grill them in a grill pan like <this> but you can spray your grill with PAM and then put them right on the grill. These take longer than the meat will, so start with them. I would say they take 10-15 minutes. Thinner slices cook faster.

Another side of your choice:
  • Steamed Asparagus
Clean them, snap the bottoms off, steam. When finished, drizzle with olive oil and s&p.

  • Steamed Broccoli
Clean, trim, steam, s&p.

  • Steamed Green Beans
Clean them, snap both ends off, steam. Drizzle with olive oil and s&p.

The rest of the meal:
Of course you can add a green, or fruit salad - or just fresh fruit. Breadsticks, or buttered toast, or broiled garlic bread are easy and tasty, too
I love this meal because everything is fresh and full of flavor. It's summertime appropriate, and of course, much healthier than restaurant food. :)
